Tuna Salad Sandwich
I baked another loaf of herbed bread, this time flavoured with oregano, sweet basil, and thyme.
I sliced the loaf and toasted them. I then made an incredible tuna salad sandwich of the toasted bread and served with cream of mushroom soup and a nice dill pickle.
I think I want to try a dill bread at some time and have tuna salad on it!

They are some herbs which are difficult to do with yeast as a leavener because the herbs have anti-microbial action. I have found adding herbs to bread can significantly slow the proofing of the dough. Particularly thyme (thymol is an active ingredient in thyme and is used as the active ingredient of many mouthwash for this very reason).
