Asian Mussel Recipe
We bought 2lb of wild maine mussels last night at Meijers in hopes we could reproduce the recipe for spicey asian mussels that we adore from the restaurant “Chinatown Café” in Middlesboro KY.
We have a decent knock off of their dish but it is far spicier than theirs.
Our recipe is:
2lb of mussels (de-bearded, and cleaned)
14oz Can Vegetable Stock
1Tbs Asian Chili Oil
1Tbs Dark Soy Sauce
2Tbs Hoisin Sauce
Freshly Ground Black Pepper
In a pot large enough to hold all the ingredients, add the vegetable broth, hoisin, chili oil, soy sauce, and freshly ground black pepper. Bring to a boil and add the mussels, return to a boil (covered) and cook until the shells of all the mussels have opened. Remove one of the shells of each mussel and return to the liquid. Serve hot.

Lexington Part Trois
We had to go to Lexington today to pick up our glasses as we were to late to have them fabricated yesterday.
My new glasses really improved my vision significantly from my old pair, much lighter, and far smaller frames.
Elli visited Victoria Secrets and had a bra fitting, she purchased a quite pretty bra.
We also visited Meijers and bought a few staples. Elli was enthralled with the large international section, with tons of goodies from England such as Ribena, Hob Nobs, Cordials, etc.
Lexington Part Deux
I have to go back to Lexington and have my final progess check on my contact lens today.
Glasses are cool, but they make microscopy difficult, especially when some of the microscopes have the pointer in a lens that may not have diopter adjustment. Also in chemistry lab, my required safety glasses do not fit over my existing glasses, which sorta facilitated me not wearing my glasses to chem lab (not recommended when it comes to reading small measuring instruments).
I also have to get something appropriate for the Phi Sigma initiation/banquet coming up on the 29th.
If we visit whole foods I need to pick up more medjool dates, they are amazing. The swiss muesli was quite good in youghurt so I could use more of that as well. I haven’t tried the gojii berries yet, so I need to find a use for them.
I think we are going to eat at Panetta and see how well they compare to Atlanta Bread Co.
Wednesday Night Tai Chi
We finished the Tai Chi 24-Form set this past Wednesday, now it is time to start slowing down the form and perfecting the movements.
Having been taught the 64-Form set years ago definately complicated learning the 24-Form as I kept wanting to go from one movement into the wrong movement for the 24-Form.
My favorite posture is probably movement is “Wave Hands Like Clouds” in both the 24-Form and the 64-Form, as it is incredibly meditative and quite pretty to behold.
