Chipotle Cauliflower Pasta
This was incredible, absolutely incredible.
I started by cutting ½ of a cauliflower into florets and adding to a microwaveable rice cooker.
I add to this ¾ cup of water, 1tsp of butter, 1tsp of madras curry powder, and 2tbs Tabasco Chipotle Sauce.
Microwave this for 15 minutes or until tender.
Prepare 1lb of rotini pasta as directed by the package.
Serve drained pasta in individual bowls, top with any good pasta sauce (Barilla Lasagna Sauce is great), add the cauliflower on top along with shreds of a good extra sharp cheddar (à la cracker barrel). You can embellish this with toasted pine nuts if you so desire.

I have been making this for a year or so and found that the addition of curry powder to the cauliflower accentuates the chipotle very well.
