Fish & Chips

Last night I caught an episode of “Good Eats” on Food Network and it inspired me to give fish & chips a try.

I improvised a fish batter which turned out excellent.

I served with balsamic vinegar, home made tartar sauce, batter crispies, and pomme frîtes.


Rob’s Fish Batter
2  Tilapia Fillets (thawed)
1C AP Flour
1 Med. Egg
1Tbs Baking Powder
1Tsp Cayenne Powder
1Tsp Black Pepper
1Tsp Onion Powder
Milk (To Make Batter a Slurry)

Mix all the dry ingredients together along with egg and enough milk to make the batter the right consistency (Just a bit thicker than pancake batter).

Dry the fish filets and split down the middle.  Dredge the filets through the corn starch and shake all excess off.  Then dredge through the batter and slowly place in corn oil at 390°F (200°C).  Fry till the batter is nice and brown.

Excess batter can be fried in the hot oil as well by the tablespoon amount at a time to make greatt crispies.

    I am such a sucker for fish and chips. Mmmm. I would probably serve with malt vinegar, though, much as I love me some balsamic.

    Have you ever had Rhode Island style clam cakes? Balls of dough with chopped clams in it, fried until crispy outside and chewy inside. I haven’t had them in years, but I used to have them every summer. I miss ’em.

    I have had batter fried clams but I do not know if they were the Rhode Island style.

    When are you going to be nettable again?

    I think even people who may not favor fish would like that recipe.

    You could probabyl fry veggies in it too- mushrooms or sweet potato slices.

    The same batter could have a bit of madras curry powder added and then dip/fry cauliflower which would be nice.

    I have used a basic pancake batter with curry powder for battering cauliflower in the past and it was incredible.

    I have not tried sweet potato slices but have tried batter dipped mushrooms and love them.

    I can’t wait for morels to popup (Morchella esculenta is a local wild mushroom which I adore.)
