Cake it’s what’s for dessert!
I decided that it was time for a butter cake with a brandy chocolate ganache.
The cake is so moist that the slices have to be supported carefully or they will break.
I could have jazzed it up a bit better if I had a just a twist of citrus zest (for colour) or a fanned strawberry and a spring of mint.

It gets better with age as the sugars in the icing form a thicker fudge like consistency.
