Love is Poke Sallet

and I went into the forest and gathered more poke sallet (Phytolacca americana) shoots for one of our favorite meals.

This plant is so popular here as a food item that my county has a “Poke Sallet Festival”.

One of the things about this plant is that it contains some pretty harsh toxins which have to be leached out in cooking to make it good.  Otherwise the chemicals cause some strong esophageal & gastrointestinal damage.  I myself was taught to make poke sallet by my grandmother.  Her recipe involves basically combining the poke plant with plantain (Plantago major), boiling/draining/rinsing three times, finally drying the cooked greens and scrambling with four eggs.

It is absolutely incredible!
