Flour is Flour?

You know when I grew up I always thought wheat flour was wheat flour and that there was not much difference between brands.

Boy was I forever wrong!

My grandmother who perhaps inspired me the most in all things culinary always purchased “White Lily” flour.  My wife and me found this big 20+ lb of Gold Medal AP flour.  I must say that this is a very hard wheat flour, very hard.  As for baking you simply cannot do a decent cake with it as it literally is just to dense, but it is okay for bread.

Now back to White Lily flour, it is nothing shy of incredible when it comes to baking, the flour is the softest winter wheat and they aren’t kidding.  In my area cake flour is hard to find and very pricey for a small small box, so if anyone wants to do any baking and think flour is flour simply pick up a bag of White Lily flour and find out just how soft and moist your baked goods can be.
