36 Lady Fingers
450g Marscapone Cheese
5 Egg Yolks
1 Whipped Egg White
150g Sugar
12 Coffee Cups Plain Coffee
1 Small Glass of your favorite liquor
Powdered Cocoa
Beat egg yolks together with sugar in a bowl until frothy; stir in cheese and mix. Add whipped egg white and liquor. Mix well into a smooth cream. In a baking dish spread a layer of cream, soak the lady fingers in coffee, turning them on both sides and then line them on the cheese mixture. Layer more creamy cheese mixture and coffee soaked lady fingers. Top with creamy cheese mixture and spread evenly an dust with cocoa powder.
Refrigerate for atleast 2 hours , best if prepared one day in advance.
*notes marscapone can be pricey and difficult to find in some areas, the yoghurt recipe that I posted earlier (when using whole milk) can make a decent marscapone cheese if you allow the yoghurt to remain at 50°C for a good 12 hours and then srain off the whey with a hankerchief for 24 hrs. This marscapone like cheese can be pickled in brine solution to yield a decent feta aswell (6 tbs salt in 28 oz liquid).
