For Christmas my wife received a food vacuum (Black & Decker version).
I can’t say how much money that device has saved us as a family.
One of the first things we did was vacuum pack a huge platter of shrimp that we bought in bulk. We have since used it for some of the best vermont extra sharp cheddar, strawberries, fish, and just a few minutes ago I vacuum packed a good 3lb of blue cheese chunks.
Oxidation is truly a formidable enemy of fresh food.
One of the things I put together a few weeks ago as a nice little late night snack is a blue cheese/bacon bit sandwich. I basically use a sandwich spread on whole wheat, crumble a bit of blue cheese, sprinkle bacon bits across the cheese, microwave for 45 secs in a microwave. It’s quite tasty.
I like doing blue cheese (like a nice Stilton) on wheat toast with my homemade cranberry sauce.

The tartness of a cranberry and that nice creamy texture of stilton contrasting with the crustiness of toast mmmmmmmmmm.
Nothing shy of remarkable.
