Limoncello
A few weeks ago I saw on “Everyday Italian” a recipe by Giada De Laurentiis for limoncello.
While in Kingsport TN we purchased 1.75l of vodka, 1l rum, 750ml brandy, and some cabernet sauvignon.
A few days ago I decided to make limoncello from some of the vodka. I deviated from Giada’s recipe by making only 500ml of the lemony drink and to use lemon zest instead of peel.
So I basically zested 5 lemons as close to no-pith as possible. Soaked the zest in 500ml of vodka for three days, strained it through a coffee filter to remove the zest, and added a cooked sugar water solution for sweetness.
I am giving one small bottle to a friend as a gift.
The taste is incredibly nice and smooth, and very lemony.
