I am somewhat a conniseur of hot sauces, and something of a chilehead.

One of my new favorites in the hot sauce arena is Marie Sharp’s Habanero Pepper Sauce. A few months ago me and Elli were invited to dinner with the Osbornes who frequently visit Belize, where Marie Sharp’s originates. Needless to say they served several of Marie Sharp’s sauces with scalloped potatos and salmon cakes. One of the main reasons I am so attracted to Marie Sharp’s hot sauces is that they aren’t as acidic and vinegary flavoured, instead these hot sauces are carrot based, providing an interesting sweetness.

Another of my favorite sauces is Tabasco’s Chipotle Sauce which has an incredibly smokey flavour that kicks ass in a wide variety of applications.

My final palate searing goodie I shall mention is Sriracha, you know cock sauce, rooster sauce, etc. I love the garlicy flavour of this sauce. Excellent on everything from popcorn to rice dishes.
