I made an incredible lunch today.
Chili Relleno (stuffed with pepperjack cheese) smothered in a lightly seasoned green tomato purée.
Cheesy refried beans
Butter Fried Sweet Corn (the best sweet corn I have ever tasted)
Dessert:
Peanut Butter Sunday Icecream
Blueberry Pie
The corn was the very best I have ever had, even compared to the corn I have grown in the past. This corn was grown in Scott County Tennessee and was very sweet, juicy, and tender.
I simply warmed up the butter with the freshly cut corn, usually fried corn involves a more thorough cooking. There was absolutely no need to add cream to this corn.

August 26th, 2007 at 5:04 pmWe scored three quarts yesterday, one is a fudge brownie icecream, one is called Ultra Chunk and has chocolate covered pecans and caramel swirl.
Incredibly good, creamy and dense, with a crapload of inclusions.
