Violet Jelly

This was recently brought to my attention and I thought this is something worth trying.

Viola sororia

Summer Violets (Viola sororia) are very common at this time of year and apparently make a great jelly (recipe below).

2C Viola sororia flowers (opened flowers best)
2C Boiling Water
¼C Lemon Juice
4C Sugar
3oz Liquid Pectin

Wash the petals thoroughly and place in a jar with the boiling water and steep overnight.  Sift through a fine sieve, add the remaining ingredients and bring to a rolling boil and continue boiling two to three minutes.  Remove any foam on surface, pour into sterile jelly jars and seal the lids as you would any other home made jelly.
