Watermelon Rind Sambhar
I saw a few weeks ago ‘pickled watermelon rind’ and decided to read up on eating watermelon rind. Big news is that watermelon rind contains compounds which behave similarly to viagra. Well we purchased a watermelon for Independence Day festivities and had some rind left. From what I gather, watermelon rind is eaten in many cultures and can be made into everything from soups to grilled, it is apparently somewhat bland on it’s own but much like tofu can be flavoured easily enough.
Here is my watermelon rind sambhar recipe:
1Tbs Garam Masala
1Tbs Minced Garlic
5 Green Cardamom Pods (decorticated and ground)
1Tbs Ground Cumin
1Tsp Ground Coriander
½C Water
1Tbs Corn Oil
¼ Medium Vidalia Onion
3C Watermelon Rind (peeled)
In a pot on medium heat, add the oil, minced garlic, and the onion. Chop the watermelon rind into 1″ squares and add to the pot. Add remaining ingredients and bring to a slow boil. Cook for around ten minutes, until the rind is soft. With a stick blender, blend until smooth, serve with a dollop of sour cream, créme fraiche, or yoghurt.
I served mine with my freshly baked honey-wheat bread that I made last night.
