Citrusy Watermelon Rind Udon
I decided to use the remainder of my watermelon rind in a noodle dish.
Sauce:
3C Watermelon Rind (peeled)
1Tsp Red Chili Paste
1Tbs Lemon Grass Paste
1Tbs Ginger Paste
¼C Soy Sauce
1 Medium Orange (Cut into Prims)
¼C Sunflower Seed Kernels
½C Water
3Tbs Toasted Sesame Seed Oil
Heat all the ingredients except the sesame seed oil in a medium pot until the rind is soft (usually 8 – 12 minutes). Prepare 10oz of Udon according to manufacturers instructions. Mix the sauce with the toasted sesame seed oil and serve over the udon.
